Ingredients
  • 2 cup Beans
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 3 clove Garlic
  • 4 cup Vegetable Broth
  • 2 tablespoon Tomato Paste
  • 2 piece Bay Leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
Instructions
  1. Soak the beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, heat olive oil over medium heat.
  4. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.
  5. Add the drained beans, vegetable broth, tomato paste, bay leaves, thyme, salt, and black pepper.
  6. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  7. Remove bay leaves.
  8. Serve hot and enjoy!
