Ingredients
  • 2 cup Lentils
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 3 clove Garlic cloves
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 leaf Bay leaf
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse the lentils under cold water and drain.
  2. In a slow cooker, combine the lentils, vegetable broth, onion, carrot, celery, garlic, cumin, paprika, salt, black pepper, and bay leaf.
  3. Cover and cook on low for 4 hours or until the lentils are tender.
  4. Remove the bay leaves and stir in the fresh parsley and lemon juice.
  5. Let the lentils rest for 10 minutes before serving.
  6. Serve hot with your favorite bread or rice.
