Ingredients
  • 500 gram Sweet Potatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Fresh Cilantro
  • 2 tablespoon Toasted Pumpkin Seeds
Instructions
  1. Peel and chop the sweet potatoes, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened.
  3. Add the sweet potatoes, vegetable stock, coconut milk, ground cumin, ground coriander, ground ginger, salt, and black pepper to the pot.
  4. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the sweet potatoes are tender.
  5. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  6. Serve the soup hot, garnished with fresh cilantro and toasted pumpkin seeds.
