Ingredients
  • 500 gram Butternut Squash
  • 200 gram Carrots
  • 200 gram Potatoes
  • 150 gram Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Fresh Parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.
  2. Add butternut squash, carrots, and potatoes to the pot. Stir well.
  3. Pour in vegetable stock and bring to a boil. Reduce heat and let simmer for 20 minutes, or until vegetables are tender.
  4. Using an immersion blender or a regular blender, puree the soup until smooth.
  5. Return the soup to the pot and stir in coconut milk, ground cinnamon, ground nutmeg, salt, and black pepper. Heat over low heat for 5 minutes, stirring occasionally.
  6. Serve hot, garnished with fresh parsley.
