  • 1 medium Onion
  • 3 clove Garlic
  • 2 medium Carrot
  • 2 stalk Celery
  • 2 medium Potato
  • 1 can Canned Tomatoes
  • 4 cup Vegetable Broth
  • 1 can Cannellini Beans
  • 1 medium Zucchini
  • 1 cup Green Beans
  • 2 cup Kale
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Dried Oregano
  • 1 piece Bay Leaf
  • 4 tablespoon Parmesan Cheese
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add carrot, celery, and potato. Cook for 5 minutes.
  3. Stir in canned tomatoes and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Add cannellini beans, zucchini, green beans, kale, salt, black pepper, dried oregano, and bay leaf. Simmer for another 10 minutes.
  6. Remove bay leaf before serving.
  7. Serve hot, garnished with grated Parmesan cheese.
