Ingredients
  • 2 teaspoon Olive oil
  • 1 medium-sized Onion
  • 2 minced Garlic cloves
  • 2 medium-sized Potatoes
  • 4 cup Vegetable broth
  • 2 cup Kale
  • 2 cup Spinach
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 1 cup Coconut milk
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until translucent.
  2. Add the potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until the potatoes are tender.
  3. Add the kale and spinach, cook for an additional 5 minutes until wilted.
  4. Season with salt and black pepper.
  5. Remove from heat and let the soup cool slightly.
  6. Transfer the soup to a blender or use an immersion blender to puree until smooth.
  7. Return the soup to the pot and stir in lemon juice and coconut milk.
  8. Heat the soup over low heat until warmed through.
  9. Serve hot and garnish with additional black pepper if desired.
