Ingredients
  • 1 cup Wild rice
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook wild rice according to package instructions. Drain and let it cool.
  2. Chop cucumber, cherry tomatoes, red bell pepper, red onion, and fresh parsley.
  3. In a large bowl, combine the cooked wild rice, chopped vegetables, and fresh parsley.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Let the salad rest for 10 minutes to allow the flavors to meld.
