Ingredients
  • 1 cup Wild rice
  • 2 cup Water
  • 1/2 cup Raisins
  • 1/2 cup Red bell pepper
  • 1/4 cup Green onions
  • 1/4 cup Parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Rinse the wild rice under cold water.
  2. In a medium saucepan, bring water to a boil and add the rinsed wild rice. Reduce heat, cover, and simmer for 45 minutes or until the rice is tender.
  3. In a large bowl, combine the cooked wild rice, raisins, red bell pepper, green onions, and parsley.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the rice mixture and toss to combine.
  5. Let the salad rest for 10 minutes to allow the flavors to meld.
  6. Serve the wild rice salad chilled or at room temperature.
