Ingredients
  • 4 tortilla Whole wheat tortillas
  • 1 cup Chickpeas
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 1 small Red onion
  • 1 medium Avocado
  • 2 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Cumin powder
  • 1 teaspoon Paprika
  • 4 tablespoon Greek yogurt
  • 4 tablespoon Fresh cilantro
Instructions
  1. In a bowl, combine chickpeas, lemon juice, olive oil, salt, black pepper, cumin powder, and paprika. Mix well.
  2. Heat a grill pan or sauté pan over medium heat. Add the marinated chickpeas and cook until crispy, about 5 minutes.
  3. Meanwhile, warm the whole wheat tortillas.
  4. Slice the red bell pepper, cucumber, red onion, and avocado.
  5. Spread Greek yogurt on each tortilla.
  6. Top with the cooked chickpeas, sliced vegetables, and fresh cilantro.
  7. Roll up the tortillas tightly and serve.
