Ingredients
  • 2 cup Whole Wheat Flour
  • 2 tablespoon Ground Flaxseed
  • 2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 1 cup Applesauce
  • 0.5 cup Maple Syrup
  • 0.5 cup Almond Milk
  • 1 teaspoon Vanilla Extract
  • 1 medium Apple
  • 0.5 cup Walnuts
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the whole wheat flour, ground flaxseed, baking powder, cinnamon, and salt.
  3. In a separate bowl, mix together the applesauce, maple syrup, almond milk, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the chopped apple and walnuts.
  6. Spoon the batter into a greased muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
