Ingredients
  • 1 cup Whole Grain 'Steel-Cut' Oats
  • 1/2 cup Almond Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1/4 cup Coconut Oil
  • 1/4 cup Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Dried Cranberries
  • 1/4 cup Chopped Walnuts
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the oats, almond flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the coconut oil, maple syrup, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix well.
  5. Fold in the dried cranberries and chopped walnuts.
  6. Line a baking sheet with parchment paper.
  7. Scoop spoonfuls of the cookie dough onto the baking sheet and flatten them slightly.
  8. Bake for 12-15 minutes or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  10. Transfer the cookies to a wire rack and let them cool completely.
