Ingredients
  • 1 cup White rice
  • 1 cup Wild rice
  • 2 cup Vegetable broth
  • 1 medium Onion
  • 2 minced Garlic cloves
  • 2 tablespoon Olive oil
  • 1 medium Carrot
  • 1 medium Celery stalk
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Parsley
Instructions
  1. Rinse the white rice and wild rice.
  2. In a saucepan, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until fragrant.
  4. Add carrot and celery, cook until slightly softened.
  5. Stir in the white rice and wild rice, cook for 2 minutes.
  6. Add vegetable broth, dried thyme, salt, and black pepper.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the rice is tender.
  8. Remove from heat and let rest for 5 minutes.
  9. Fluff the rice with a fork and garnish with parsley.
  10. Serve hot as a side dish.
