Soak the white beans overnight in water.

Drain and rinse the beans.

In a large pot, heat olive oil over medium heat.

Add chopped onion, minced garlic, sliced carrots, and diced celery. Cook until vegetables are softened.

Add tomato paste, bay leaves, thyme, salt, and black pepper. Stir well.

Add soaked white beans and vegetable broth to the pot.

Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.

Remove bay leaves.
