Ingredients
  • 8 ounce White Beans
  • 4 cup Vegetable Broth
  • 1 can Tomatoes
  • 2 medium Carrots
  • 2 stalk Celery Stalks
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 1 medium Zucchini
  • 1 cup Spinach
  • 2 tablespoon Olive Oil
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender.
  2. Add zucchini, tomatoes, vegetable broth, Italian seasoning, salt, and black pepper. Bring to a boil and simmer for 20 minutes.
  3. Add white beans and spinach. Cook for an additional 5 minutes.
  4. Serve hot and enjoy!
