Ingredients
  • 1 cup Wheat germ
  • 1 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Ripe bananas, mashed
  • 1/2 cup Honey
  • 1/4 cup Vegetable oil
  • 1/4 cup Almond milk
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a large bowl, combine the wheat germ, all-purpose flour, baking powder, and salt.
  3. In a separate bowl, mix together the mashed bananas, honey, vegetable oil, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
