Ingredients
  • 1 cup Wheat Berries
  • 2 large Carrots
  • 2 medium Zucchini
  • 1 large Red Bell Pepper
  • 1 medium Red Onion
  • 2 clove Garlic Cloves
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Herbs (such as parsley or basil)
Instructions
  1. Preheat the oven to 400°F (200°C). In a saucepan, bring 2 cups of water to a boil. Add the wheat berries and simmer for 30-35 minutes until tender. Drain any excess water. Meanwhile, chop the carrots, zucchini, red bell pepper, and red onion into bite-sized pieces. Mince the garlic cloves. Place the chopped vegetables and minced garlic on a baking sheet. Drizzle with olive oil, salt, and black pepper. Toss to coat evenly. Roast the vegetables in the preheated oven for 20-25 minutes until they are tender and slightly caramelized. In a large bowl, combine the cooked wheat berries and roasted vegetables. Add fresh herbs and toss to combine. Let the dish rest for 5 minutes before serving. Enjoy!
