Ingredients
  • 4 tablespoon Peanut butter
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ginger
  • 2 medium Sweet potato
  • 1 medium Red bell pepper
  • 4 cup Vegetable broth
  • 1 cup Canned diced tomatoes
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 4 tablespoon Roasted peanuts
Instructions
  1. In a large pot, heat oil over medium heat. Add onion, garlic, and ginger, and cook until onion is translucent.
  2. Add sweet potato and red bell pepper, and cook for 5 minutes.
  3. Stir in peanut butter, vegetable broth, diced tomatoes, cayenne pepper, cumin, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until sweet potatoes are tender.
  4. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  5. Serve hot, garnished with fresh cilantro and roasted peanuts.
