  3. Stir in peanut butter, vegetable broth, diced tomatoes, cayenne pepper, cumin, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until sweet potatoes are tender.
  4. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  5. Serve hot, garnished with fresh cilantro and roasted peanuts.
