Ingredients
  • 1 cup Watermelon puree
  • 1.5 cup Almond flour
  • 0.5 cup Coconut flour
  • 0.25 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/3 cup Mini chocolate chips
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the watermelon puree, almond flour, coconut flour, maple syrup, vanilla extract, baking powder, and salt. Mix well.
  3. Fold in the mini chocolate chips.
  4. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  5. Bake for 12-15 minutes, or until the edges are golden brown.
  6. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  7. Transfer to a wire rack to cool completely.
