Ingredients
  • 2 cup Watercress
  • 1 head Cauliflower
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  2. Add cauliflower florets and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until cauliflower is tender.
  3. Stir in watercress and coconut milk. Cook for an additional 5 minutes.
  4. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  5. Stir in lemon juice, salt, and black pepper.
  6. Serve hot and garnish with additional watercress leaves, if desired.
