  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potatoes, slice the Brussels sprouts in half, and chop the carrots and red onion into bite-sized pieces.
  3. In a large bowl, toss the sweet potatoes, Brussels sprouts, carrots, and red onion with olive oil, balsamic vinegar, honey, salt, and black pepper until well coated.
  4. Spread the vegetables evenly on a baking sheet and roast for 25 minutes, or until tender and slightly caramelized.
  5. In the last 5 minutes of roasting, add the pecans to the baking sheet to toast.
  6. Remove the roasted vegetables from the oven and let them cool for 5 minutes.
  7. In a large salad bowl, combine the roasted vegetables, dried cranberries, baby spinach, and crumbled goat cheese.
  8. Toss gently to combine all the ingredients.
  9. Serve the warm winter-vegetable salad immediately and enjoy!
