  • 2 cup Yellow squash
  • 2 cup Zucchini
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 2 clove Garlic
  • 1 cup Cherry tomatoes
  • 1/2 cup Red onion
  • 1/4 cup Fresh basil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Parmesan cheese
Instructions
  1. Preheat grill or grill pan over medium heat.
  2. Slice the yellow squash and zucchini into 1/4-inch thick rounds.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.
  4. Brush the squash rounds with the olive oil mixture.
  5. Grill the squash rounds for 2-3 minutes per side, until tender and lightly charred.
  6. Transfer the grilled squash to a large bowl.
  7. Add halved cherry tomatoes, thinly sliced red onion, and chopped fresh basil to the bowl.
  8. Drizzle with the remaining olive oil mixture and toss to combine.
  9. Let the salad rest for 5 minutes to allow the flavors to meld.
  10. Sprinkle with grated Parmesan cheese before serving.
