  • 2 cup Corn kernels
  • 1 cup Lima beans
  • 1 cup Red bell pepper
  • 1 cup Red onion
  • 1 cup Cherry tomatoes
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Heat olive oil in a pan over medium heat. Add red onion and sauté until translucent.
  2. Add corn kernels, lima beans, and red bell pepper. Sauté for 5 minutes.
  3. Stir in cherry tomatoes and cook for an additional 2 minutes.
  4. Remove from heat and let it rest for 5 minutes.
  5. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  6. Drizzle the dressing over the warm succotash salad.
  7. Garnish with fresh parsley.
  8. Serve warm and enjoy!
