Ingredients
  • 1 cup Lentils
  • 2 cup Vegetable broth
  • 1 small Red onion
  • 1 medium Carrot
  • 2 medium Celery stalks
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Rinse the lentils and cook them in vegetable broth until tender. Drain and set aside.
  2. Chop the red onion, carrot, celery, cherry tomatoes, cucumber, and fresh parsley.
  3. In a large bowl, combine the cooked lentils, chopped vegetables, and fresh parsley.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the lentil mixture and toss gently to combine.
  6. Let the salad rest for 5 minutes to allow the flavors to meld.
  7. Serve warm and enjoy!
