Ingredients
  • 1 cup Lentils
  • 1 medium Onion
  • 2 medium Bell Peppers
  • 2 cup Spinach
  • 2 tablespoon Olive Oil
  • 2 clove Garlic
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Rinse lentils thoroughly and cook them according to package instructions.
  2. In a large pan, heat olive oil over medium heat.
  3. Add chopped onion and sauté until translucent.
  4. Add sliced bell peppers and minced garlic, and cook for another 5 minutes.
  5. Add cooked lentils to the pan and mix well.
  6. Season with salt, black pepper, and lemon juice.
  7. Add spinach to the pan and cook until wilted.
  8. Remove from heat and let it rest for 5 minutes.
  9. Serve warm and enjoy!
