  2. Cut the cauliflower into florets and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  3. Roast the cauliflower in the preheated oven for 20 minutes, or until golden brown and tender.
  4. While the cauliflower is roasting, heat a tablespoon of olive oil in a skillet over medium heat. Add the garlic and sauté for 1-2 minutes, until fragrant.
  5. Add the cherry tomatoes and red onion to the skillet and cook for 5 minutes, until softened.
  6. In a large bowl, combine the roasted cauliflower, sautéed tomatoes and onions, fresh parsley, lemon juice, salt, and black pepper. Toss gently to combine.
  7. Serve the warm cauliflower salad topped with crumbled feta cheese. Enjoy!
