Ingredients
  • 1 can Cannellini beans
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 1 cup Fresh parsley
  • 1 cup Fresh basil
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Drain and rinse the cannellini beans.
  2. Slice the cherry tomatoes in half.
  3. Finely chop the red onion, fresh parsley, and fresh basil.
  4. In a large bowl, combine the cannellini beans, cherry tomatoes, red onion, parsley, and basil.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  6. Pour the dressing over the bean mixture and toss to combine.
