Ingredients
  • 200 gram Rice Noodles
  • 1 cup Carrots
  • 1 cup Cucumber
  • 1 cup Bell Pepper
  • 1 cup Mint Leaves
  • 1 cup Cilantro
  • 0.5 cup Roasted Peanuts
  • 1 piece Lime
  • 2 teaspoon Soy Sauce
  • 1 teaspoon Sesame Oil
  • 2 clove Garlic
  • 1 piece Chili
  • 1 teaspoon Maple Syrup
  • 0.5 cup Water
Instructions
  1. Cook the rice noodles according to package instructions. Drain and rinse with cold water.
  2. Julienne the carrots, cucumber, and bell pepper.
  3. In a small bowl, whisk together lime juice, soy sauce, sesame oil, minced garlic, chopped chili, maple syrup, and water to make the dressing.
  4. In a large bowl, combine the cooked rice noodles, julienned vegetables, mint leaves, cilantro, and roasted peanuts.
  5. Pour the dressing over the salad and toss well to combine.
  6. Serve the Vietnamese Noodle Salad chilled and garnish with additional mint leaves and peanuts, if desired.
