Ingredients
  • 800 gram Sweet Potatoes
  • 2 teaspoon Olive Oil
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin
  • 1 can Chopped Tomatoes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 200°C (180°C fan).
  2. Wash and scrub the sweet potatoes, then prick them all over with a fork.
  3. Place the sweet potatoes on a baking tray and bake for 40-45 minutes, or until tender.
  4. Meanwhile, heat the olive oil in a pan over medium heat. Add the onion and garlic, and cook until softened.
  5. Stir in the smoked paprika and cumin, and cook for an additional minute.
  6. Add the chopped tomatoes, salt, and black pepper. Simmer for 10 minutes, stirring occasionally.
  7. Once the sweet potatoes are cooked, remove them from the oven and let them rest for 5 minutes.
  8. Cut each sweet potato in half lengthwise and scoop out some of the flesh to create a well.
  9. Spoon the smoky tomato filling into each sweet potato well.
  10. Place the filled sweet potatoes back in the oven for 5 minutes to heat through.
  11. Serve hot, garnished with fresh parsley.
