Ingredients
  • 2 sheet Puff pastry sheets
  • 2 medium Carrots
  • 1 medium Zucchini
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 2 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 8 leaves Fresh basil leaves
  • 1/2 cup Vegan cream cheese
Instructions
  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Peel and slice the carrots, zucchini, red bell pepper, and red onion into thin strips.
  3. In a large bowl, toss the sliced vegetables with olive oil, garlic powder, dried thyme, salt, and black pepper until well coated.
  4. Spread the seasoned vegetables evenly on the prepared baking tray and roast in the preheated oven for 20 minutes, or until tender.
  5. While the vegetables are roasting, roll out the puff pastry sheets on a lightly floured surface.
  6. Spread the vegan cream cheese evenly over the puff pastry sheets, leaving a small border around the edges.
  7. Once the vegetables are roasted, remove them from the oven and let them cool slightly.
  8. Arrange the roasted vegetables on top of the cream cheese layer, then sprinkle fresh basil leaves over the vegetables.
  9. Carefully roll up the puff pastry sheets, starting from one end, to form a log shape.
  10. Place the vegetable strudel onto the lined baking tray and brush the top with a little olive oil.
  11. Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and crispy.
  12. Remove from the oven and let it rest for 10 minutes before slicing and serving.
