Ingredients
  • 1 cup Gluten-free flour blend
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Vegan butter
  • 1/2 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 packet Jelly crystals (any flavor)
Instructions
  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the gluten-free flour blend, baking powder, and salt.
  3. In a separate bowl, cream together the vegan butter, granulated sugar, and vanilla extract until light and fluffy.
  4. Gradually add the dry ingredients to the wet ingredients, mixing well to form a dough.
  5. Roll the dough into small balls and place them on the prepared baking sheet.
  6. Use your thumb or the back of a spoon to create an indentation in the center of each cookie.
  7. Fill each indentation with a small amount of jelly crystals.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  10. Transfer to a wire rack to cool completely.
