Ingredients
  • 4 medium-sized Onions
  • 2 tablespoon Olive Oil
  • 2 clove Garlic
  • 2 leaf Bay Leaves
  • 2 sprig Thyme
  • 1000 milliliter Vegetable Stock
  • 150 milliliter Red Wine
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Balsamic Vinegar
  • 4 slice Gluten-free Bread
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onions and cook until caramelized.
  2. Add minced garlic, bay leaves, and thyme. Cook for another minute.
  3. Pour in vegetable stock and red wine. Season with salt and black pepper.
  4. Simmer for 45 minutes until the flavors are well blended.
  5. Stir in balsamic vinegar and remove from heat.
  6. Preheat the oven to 180 degrees Celsius.
  7. Toast gluten-free bread slices.
  8. Ladle the soup into bowls and place a slice of toasted bread on top of each bowl.
  9. Sprinkle with dairy-free or vegan cheese if desired.
  10. Place the soup bowls in the oven for 5 minutes until the cheese is melted.
  11. Serve hot and enjoy!
