  • 2 cup Gluten-free flour blend
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 cup Almond milk
  • 1 teaspoon Apple cider vinegar
  • 1 tablespoon Olive oil
  • 2 tablespoon Cornmeal
Instructions
  1. In a large bowl, mix the gluten-free flour blend, baking powder, salt, and sugar.
  2. In a separate bowl, combine the almond milk, apple cider vinegar, and olive oil.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined.
  4. Cover the bowl and let the dough rest for 1 hour.
  5. Preheat a griddle or non-stick pan over medium heat.
  6. Sprinkle cornmeal onto the griddle or pan.
  7. Scoop 1/4 cup portions of the dough onto the griddle or pan.
  8. Cook for 5 minutes on each side, or until golden brown.
