Marinara sauce originated in Naples, Italy and is named after the sailors (‘marinai’) who used to make it with the tomatoes they brought back from the Americas.

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until softened.
  2. Add carrot, celery, red bell pepper, and zucchini. Cook until vegetables are tender.
  3. Stir in crushed tomatoes, tomato paste, dried basil, dried oregano, salt, black pepper, and red pepper flakes.
  4. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
  5. Remove from heat and stir in fresh basil and parsley.
  6. Serve over pasta or as a sauce for pizza.
