  • 1.5 cup Whole Wheat Flour
  • 0.5 cup Oats
  • 2 teaspoon Baking Powder
  • 0.5 teaspoon Baking Soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 0.5 cup Bananas, mashed
  • 2 tablespoon Honey
  • 2 tablespoon Coconut Oil, melted
  • 0.75 cup Almond Milk
  • 1 teaspoon Vanilla Extract
  • 1 cup Mixed Berries (Strawberries, Blueberries, Raspberries)
Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the whole wheat flour, oats, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, mix together the mashed bananas, honey, coconut oil, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the mixed berries.
  6. Divide the batter evenly among the muffin liners.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
