Ingredients
  • 200 gram Carrots
  • 300 gram Potatoes
  • 100 gram Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. In a large pot, heat some oil and sauté the onion and garlic until fragrant.
  2. Add the carrots and potatoes, and cook for a few minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and simmer until the vegetables are tender.
  5. Using an immersion blender, blend the soup until smooth.
  6. Stir in the coconut milk, lime juice, salt, and black pepper.
  7. Simmer for another 5 minutes.
  8. Serve hot, garnished with fresh cilantro.
