Ingredients
  • 2 cup Zucchini
  • 1 cup Carrot
  • 1 cup Red Bell Pepper
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 large Eggs
  • 1 cup Milk
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 cup Grated Parmesan Cheese
  • 2 tablespoon Fresh Basil
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini, carrot, red bell pepper, onion, and garlic.
  3. Heat olive oil in a pan and sauté the grated vegetables until softened.
  4. Season with salt and black pepper.
  5. In a mixing bowl, whisk together eggs, milk, all-purpose flour, baking powder, grated Parmesan cheese, and fresh basil.
  6. Add the sautéed vegetables to the egg mixture and mix well.
  7. Pour the mixture into a greased baking dish.
  8. Bake for 25-30 minutes or until the top is golden brown.
  9. Let it rest for 10 minutes before cutting into squares.
  10. Serve warm and enjoy!
