  • 2 teaspoon Olive oil
  • 4 clove Garlic cloves
  • 1 medium Onion
  • 1 medium Bell pepper (any color)
  • 2 medium Zucchini
  • 1 cup Mushrooms
  • 1 cup Cherry tomatoes
  • 2 cup Spinach
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large skillet over medium heat. Add garlic and onion, sauté until fragrant.
  2. Add bell pepper, zucchini, mushrooms, and cherry tomatoes. Cook until vegetables are tender.
  3. Stir in spinach and cook until wilted.
  4. Season with salt, black pepper, paprika, and cumin.
  5. Drizzle lemon juice over the skillet.
  6. Garnish with fresh parsley.
