  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring vegetable broth to a boil and add the rinsed quinoa. Cook for 15 minutes or until the quinoa is tender.
  3. Meanwhile, chop the carrots, broccoli, red bell pepper, and zucchini into bite-sized pieces.
  4. Heat olive oil in a large skillet and sauté the garlic until fragrant.
  5. Add the chopped vegetables to the skillet and cook until tender.
  6. Once the quinoa is cooked, fluff it with a fork and transfer it to the skillet with the vegetables.
  7. Add lemon juice, salt, and black pepper to taste. Mix well.
  8. Cook for an additional 2-3 minutes, stirring occasionally.
  9. Remove from heat and let it rest for 5 minutes before serving.
  10. Serve hot and enjoy!
