Veggie Quinoa

Quinoa is actually a seed, not a grain, and is considered a complete protein source.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 11.

Rinse the quinoa under cold water.

In a saucepan, bring vegetable broth to a boil and add the rinsed quinoa. Cook for 15 minutes or until the quinoa is tender.

Meanwhile, chop the carrots, broccoli, red bell pepper, and zucchini into bite-sized pieces.

Heat olive oil in a large skillet and sauté the garlic until fragrant.

Add the chopped vegetables to the skillet and cook until tender.

Once the quinoa is cooked, fluff it with a fork and transfer it to the skillet with the vegetables.

Add lemon juice, salt, and black pepper to taste. Mix well.

Cook for an additional 2-3 minutes, stirring occasionally.

Remove from heat and let it rest for 5 minutes before serving.
