Ingredients
  • 500 gram Potatoes
  • 1 cup Bell peppers
  • 1 medium Onion
  • 1 cup Zucchini
  • 1 cup Mushrooms
  • 1 cup Spinach
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash and dice the potatoes, bell peppers, onion, zucchini, mushrooms, and spinach.
  3. In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook for 10 minutes, stirring occasionally.
  4. Add the bell peppers, onion, zucchini, mushrooms, and spinach to the skillet. Season with salt, black pepper, and paprika. Cook for another 5 minutes.
  5. Transfer the skillet to the preheated oven and bake for 10 minutes, or until the vegetables are tender.
  6. Remove from the oven and let it rest for 5 minutes before serving.
  7. Serve the veggie hash hot and enjoy!
