Ingredients
  • 14 ounce Canned chickpeas
  • 150 gram Carrots
  • 200 gram Potatoes
  • 100 gram Onion
  • 2 piece Garlic cloves
  • 1 cup Fresh parsley
  • 2 teaspoon Lemon juice
  • 1 cup Breadcrumbs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Vegetable oil
Instructions
  1. Drain and rinse the canned chickpeas. In a food processor, combine the chickpeas, carrots, potatoes, onion, garlic cloves, fresh parsley, lemon juice, breadcrumbs, salt, and black pepper. Pulse until well combined. Shape the mixture into small balls. Heat vegetable oil in a frying pan over medium heat. Fry the veggie "fish" balls until golden brown and crispy. Remove from the pan and let them rest for 5 minutes. Serve hot with your favorite dipping sauce.
