Ingredients
  • 6 slices Bread
  • 1 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 1 medium Carrot
  • 2 medium Celery stalks
  • 2 minced Garlic cloves
  • 8 sliced Mushrooms
  • 2 cups chopped Spinach
  • 1 diced Bell pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried herbs (such as thyme, rosemary, sage)
  • for garnish chopped Parsley
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Cut the bread into cubes and spread them on a baking sheet. Bake for 10-15 minutes or until crispy.
  3. In a large skillet, heat olive oil over medium heat. Add onion, carrot, and celery, and cook until softened.
  4. Add garlic, mushrooms, bell pepper, and spinach. Cook until the vegetables are tender.
  5. In a large bowl, combine the toasted bread cubes, cooked vegetables, vegetable broth, salt, black pepper, and dried herbs. Mix well.
  6. Transfer the mixture to a baking dish and cover with foil. Bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes or until the top is golden brown.
  8. Let it rest for 5 minutes before serving. Garnish with chopped parsley.
