Ingredients
  • 1 cup Chickpeas
  • 1 cup Quinoa
  • 1 medium Carrot
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1/2 cup Breadcrumbs
  • 2 tablespoon Olive oil
  • 4 piece Burger buns
  • 4 piece Lettuce leaves
  • 4 piece Tomato slices
  • 4 piece Red onion slices
  • 4 piece Pickles
Instructions
  1. In a food processor, combine chickpeas, quinoa, carrot, red onion, garlic cloves, parsley, cumin, paprika, salt, and black pepper. Pulse until well combined but still slightly chunky.
  2. Transfer the mixture to a bowl and stir in breadcrumbs. Let it rest for 10 minutes.
  3. Shape the mixture into patties and refrigerate for 15 minutes.
  4. Heat olive oil in a pan over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.
  5. Toast the burger buns.
  6. Assemble the veggie burgers by placing a patty on the bottom bun, followed by lettuce, tomato slices, red onion slices, and pickles. Top with the other half of the bun.
  7. Serve and enjoy!
