  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes.
  2. Heat ghee in a large pan and add bay leaf, cinnamon stick, cloves, and cardamom. Saute for a minute.
  3. Add sliced onions and saute until golden brown.
  4. Add ginger-garlic paste and green chili. Saute for a minute.
  5. Add chopped tomatoes and cook until they turn mushy.
  6. Add turmeric powder, red chili powder, coriander powder, and garam masala powder. Mix well.
  7. Add mixed vegetables, mint leaves, and coriander leaves. Cook for 2-3 minutes.
  8. Drain the soaked rice and add it to the pan. Mix well with the vegetables.
  9. Add water and salt. Stir gently and cover the pan with a lid. Cook on low heat for 15-20 minutes or until the rice is cooked and the water is absorbed.
  10. Remove from heat and let it rest for 10 minutes. Fluff the rice with a fork before serving.
  11. Serve hot with raita or yogurt.
