Ingredients
  • 1 cup Barley
  • 4 cup Vegetable broth
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Zucchini
  • 1 medium Bell pepper
  • 1 cup Frozen peas
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, celery, and bell pepper. Cook until vegetables are tender.
  2. Add barley and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in zucchini, peas, salt, and black pepper. Cook for an additional 5 minutes.
  4. Remove from heat and let it rest for 5 minutes.
  5. Serve hot, garnished with fresh parsley.
