Ingredients
  • 4 piece Whole wheat tortillas
  • 1 cup Black beans
  • 2 piece Bell peppers
  • 1 medium Red onion
  • 1 cup Corn kernels
  • 1 piece Avocado
  • 1 cup Lettuce
  • 1 cup Cherry tomatoes
  • 2 tablespoon Cilantro
  • 2 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a large bowl, combine black beans, chopped bell peppers, diced red onion, corn kernels, chopped avocado, lettuce, halved cherry tomatoes, and chopped cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, cumin powder, smoked paprika, salt, and black pepper.
  3. Pour the dressing over the vegetable mixture and toss well to combine.
  4. Warm the whole wheat tortillas in a dry skillet or microwave.
  5. Spoon the vegetable mixture onto each tortilla and roll tightly to form a wrap.
  6. Serve the veggie and black bean wraps immediately or refrigerate for later.
