Ingredients
  • 1 cup Lentils
  • 4 cup Vegetable broth
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, celery, and garlic. Cook until vegetables are softened.
  4. Add tomato paste, thyme, rosemary, bay leaf, salt, and black pepper. Stir well.
  5. Add lentils and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  7. Remove bay leaf and adjust seasoning if needed.
  8. Serve hot, garnished with fresh parsley.
