  1. Rinse the mixed beans and soak them overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, carrot, celery, and minced garlic. Sauté until vegetables are tender.
  4. Drain the soaked beans and add them to the pot.
  5. Pour in vegetable broth and add bay leaves, dried thyme, salt, and black pepper.
  6. Bring the soup to a boil, then reduce heat and simmer for 30 minutes or until beans are tender.
  7. Stir in diced tomatoes and cook for an additional 5 minutes.
  8. Remove bay leaves and garnish with fresh parsley.
