  • 2 teaspoon Vegetable oil
  • 1 medium Onion
  • 1 medium Green bell pepper
  • 2 medium Celery stalks
  • 3 clove Garlic cloves
  • 1 cup Okra
  • 1 cup Tomatoes
  • 4 cup Vegetable broth
  • 2 leaf Bay leaves
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cup Cooked rice
  • 2 stalk Green onions
Instructions
  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onion, bell pepper, celery, and minced garlic. Cook until vegetables are tender.
  3. Add sliced okra, diced tomatoes, vegetable broth, bay leaves, cayenne pepper, thyme, paprika, salt, and black pepper. Stir well.
  4. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
  5. While the gumbo is simmering, cook rice according to package instructions.
  6. Serve the gumbo over a bed of cooked rice.
  7. Garnish with sliced green onions.
