Ingredients
  • 1 cup Red Lentils
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 teaspoon Ginger
  • 2 medium Tomatoes
  • 1 cup Coconut milk
  • 2 tablespoon Curry powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 1 tablespoon Lime juice
Instructions
  1. Rinse the lentils and set aside.
  2. Heat oil in a large pan and sauté the onions until translucent.
  3. Add minced garlic and grated ginger, cook for another minute.
  4. Stir in curry powder, cumin powder, and turmeric powder.
  5. Add chopped tomatoes and cook until they soften.
  6. Add the rinsed lentils and coconut milk to the pan.
  7. Season with salt and black pepper.
  8. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
  9. Stir in fresh cilantro and lime juice.
  10. Let the curry rest for 5 minutes before serving.
  11. Serve hot with rice or naan bread.
